Maple syrup is a syrup from the sap of maple trees. Maple tree sap has an average of 2% sugar, which is then boiled to a concentration of 66% sugar that makes maple syrup.

Maple syrup stores very well. It is shelf stable in a cool dry place for over a year and then once opened and refrigerated, will store for another year. Although this is shelf stable, maple syrup is not sterile.

Grades of maple syrup primarily differ in color and flavor.
Golden Color, Delicate Taste: Lightest in color and mildest in maple flavor.
Amber Color, Rich Taste: A little darker than golden with a richer more pronounced maple flavor. Known for being best on pancakes.
Dark Color, Robust Taste: This is darker with a robust maple flavor. It is great for cooking and baking, but it is still excellent on pancakes and waffles.
Very Dark Color, Strong Taste: Darkest color and most intense maple flavor. Great for making candies, marinades, or baking.
